Cabrales is Asturias’ pungent blue cheese, cave-aged for 2–6 months and crafted from a blend of cow, goat, and sheep milk. Each 100g contains 370 calories and 21g of protein, featuring a higher moisture content (34%) than Tetilla, which intensifies its creamy, tangy profile. Its natural Penicillium roqueforti cultures produce a sharper, more complex bite than the average Spanish blue, with a sodium level of 1.8g per serving — 15% lower than many imports — lending a balanced saltiness that elevates bold pairings.
