Tamales
This pre-Columbian dish features masa dough filled with meat, cheese, or sweet ingredients, wrapped in corn husks or banana leaves, and steamed to perfection. More than 30 regional varieties exist, including Oaxaca’s mole-filled black tamales and central Mexico’s red chile pork versions.
