Manila's Binondo district, established in 1594 by the Spanish, is the world's oldest Chinatown and one of Asia's most authentic street food destinations. The area is famous for its lechon de leche (whole roasted suckling pig) carved tableside, and sisig β a sizzling pork dish that has become the Philippines' most internationally recognised dish.
