Fuunji

Fuunji is a tsukemen counter near Shinjuku's south exit, known for a thick tori-gyokai dipping broth — chicken bones simmered down and finished with dried fish — rather than the pork-bone tonkotsu most shops use. It seats about a dozen people, queues run past thirty minutes at lunch, and the menu is essentially one dish.
