Auguste Escoffier
Auguste Escoffier (1846–1935) invented the brigade de cuisine—the hierarchy of stations still used in every professional kitchen from Paris to Tokyo—and codified 5,000 recipes in Le Guide Culinaire (1903), which remains the professional kitchen bible after 120 years. Kaiser Wilhelm II personally acknowledged him with the quote, 'I am the Emperor of Germany, but you are the Emperor of Chefs.'
