Three parts prosecco, two parts Aperol, one splash of soda — built over ice in a wine glass with an orange slice. The Aperol Spritz went from obscure Italian aperitivo to the most Instagrammed cocktail on the planet. Serious cocktail people love to hate it, but there's nothing better at 5 PM on a warm terrace. It's low-ABV, impossibly refreshing, and the gateway drug to Negroni appreciation.
