Stinky Tofu (Chou Doufu)
Stinky Tofu (Chou Doufu) is a polarizing delicacy, earning its name from a fermentation process that takes 3–5 days and produces an ammonia-rich aroma 10 times stronger than standard tofu. Yet after deep-frying until crisp outside and custardy inside, its flavor is surprisingly moreish, often paired with pickled cabbage and chilli sauce. A typical 100-gram serving contains 8 grams of protein and only 120 calories, making it 25% lower in fat than the average fried street food.
