Chang opened Momofuku Noodle Bar in 2004 in a tiny East Village space and redefined what casual fine dining could be β no tablecloths, no reservations, pork buns that became the most Instagrammed dish of the 2010s. The Momofuku group now spans 15+ restaurants, a food lab, Majordomo Media (producing Ugly Delicious for Netflix), and Momofuku branded chili crisp ($12/jar, sold at Whole Foods nationwide).
