Kulfi

Kulfi is denser and creamier than average Western ice cream, freezing at a 40% higher density due to its slow-reduced milk base. Traditional Indian frozen dessert made by simmering milk until thickened to one-third its original volume, then freezing in sealed conical molds without churning. Dating to the Mughal Empire in the 16th century, Kulfi appears in the Ain-i-Akbari of 1590 CE, making it older than Barfi by at least three centuries. Classic flavors like malai, pistachio, and rose deliver a concentrated sweetness that outperforms the runner-up in texture richness.
