The Peruvian-Japanese fusion cocktail bar atop Hotel Indigo Wan Chai has built one of Hong Kong's most original bar menus, drawing on Nikkei cuisine philosophy to create cocktails with pisco, sake, yuzu, and Amazon botanicals.
