Chef Alain Passard has held 3 Michelin stars at Arpege since 1996, but revolutionised the restaurant in 2001 by removing red meat and building the menu around vegetables from his own organic farms. The 7th arrondissement address has been a destination for vegetable-forward haute cuisine since 1986.
