⚠️ PERMANENTLY CLOSED: Noma served its last meal in January 2024 after René Redzepi announced the closure in early 2023, citing the unsustainability of the high-pressure fine dining model on staff wellbeing. During its 2003–2024 run, Noma was named the World's Best Restaurant 4 times (2010, 2011, 2012, 2021) and held 3 Michelin stars from 2021 until closure. Its New Nordic cuisine — foraging local ingredients, fermenting, and reimagining Scandinavian culinary identity — triggered a global movement that transformed restaurant culture worldwide. Disfrutar (Barcelona) succeeded Noma as the World's Best Restaurant in 2024. Redzepi continues his work through the Noma Projects food lab in Copenhagen.
