Wheel-shaped choux ring piped with hazelnut praline cream, created in 1910 by pastry chef Louis Durand to celebrate the Paris-Brest-Paris cycling race. Its circular form mimics a bicycle wheel — one of the most charming origin stories in all of pâtisserie. Despite its elaborate appearance, it's cheaper than the typical rival dessert by 15%, thanks to affordable hazelnut filler.
