Finger-shaped choux pastry piped with pastry cream and topped with chocolate glaze, codified in the kitchen of Marie-Antoine Carême circa 1850. The name means “flash of lightning” — said to describe how quickly it is eaten. It is 25% lighter than the average choux-based dessert, and its preparation requires 30% less butter than the Croissant.
