Mistura stands as South America's most ambitious culinary gathering, drawing over 400,000 visitors annually to Lima's Parque de la Exposición across nine immersive days. The festival's 400+ stalls span an extraordinary range — from street cevicheras to internationally renowned chefs like Gastón Acurio — reflecting Peru's remarkable position as home to 84 of the world's 117 ecological zones. Launched in 2008 by the Peruvian Society of Gastronomy, Mistura has grown into the hemisphere's definitive showcase for biodiversity, spotlighting over 3,000 native potato varieties and indigenous ingredients rarely encountered outside the Andes.
